Help for the Celiac Sufferer October 8, 2004 Maggie Might (Bloomington, IN) 14 out of 14 found this review helpful
I don't have celiac disease, but my mother-in-law does. Eating is always a major ordeal, checking every ingredient for allergens, even things you would never expect to have wheat or gluten (like some mustards!). Accidentally introducing allergens is not a great way to start off a family gathering...and potentially killing my mother-in-law doesn't strike me as a way to build an enduring relationship with my husband.
This cookbook has over 100 delicious recipes and other information that would be helpful to someone trying to cook for a celiac (like where to find certain products). The instructions are easy to follow. There is a large section on baking, which seems to be a real hurdle for anyone allergic to wheat. The Apple Muffins and 10 minute cake doughnuts taste great, and I would never know that they were wheat and gluten free from the taste. The pizza dough is very good, and the no flour peanut butter chocolate chip cookies can only be made when people are coming over or I eat the entire batch!
There are plenty of healthy options, like the stuffed bell peppers and baked salmon in dill, but fresh fruits, meat and veggies are not likely to have wheat or gluten problems -- it is the treats that are impossible to the celiac.
I strongly recommend this book to anyone who knows or is someone who suffers from celiac disease. I own several other cookbooks, but no other ones covering celiac. This one isn't laden with step-by-step pictures (there are about 40 pictures), but the content is super. There are tips throughout and a glossary that will help you if you are a novice, though a practiced cook won't find lots of interference in using the recipes.
