Hi All,
My sister just got diagnosed with Celiac's, so we bought this cookbook to try out some new recipes. We've tried several that have been fantastic--the Yam and Black Bean recipe is my favorite. I wish there was more discussion on the baking substitutes/flours, but other than that, it's been great!! Even our more carnivorous friends liked the chili and the Italian pasta!
Susan, please make more cookbooks!!!

These recipes are fantastic! Our family has one person with a pretty restricted diet, one who is a vegetarian, and all of us are healthy eaters. This book is for everyone.

New staples in our house:

Blueberry Buckwheat pancakes. Great - can make into choc chip pancakes too. I use a small amt of GFCF chips.
Coconut pancakes - all her mixes can last in fridge for a few days.
Granola - really, really good and easy.
Pumpkin scones - fantastic texture. Holds up for a few days!
J&J's Favorite Yam and Black Bean Burritos. Simple to prep ahead, then super fast to put together. Good without the tortillas too. This is probably my favorite.
Lentil Stew - makes a ton - again, easy to prep ahead and fast.

Must say, everything that I have made has been easy and fast - and delicious. Definitely a winner!

this cookbook is amazing!! i have made a ton of the recipes in it and i have LOVED every single one of them.

After becoming a vegan I discovered I was sensitive to gluten. This cookbook helped me see that there are many alternatives to wheat. The pizza crust is weird but tasty and does the trick. The waffle recipe has a lot of cinnamon in it but that works too to add enough flavor. The book doesn't rely heavily on tofu. Some of the recipes are more like good ideas, like having leftover brown rice for breakfast with fruit. There is a general overview of a vegan diet, then a gluten free diet. Overall, I have used this book and will continue to use it.
